this is the first of two sandwiches i'm posting about this week that include "bacon". yes, that would be "bacon" in quotation marks. since i don't eat meat, i turn to a great fake-bacon (from the wonderful ying ying soy foods at the st. lawrence market). you, of course, may wish to use the real thing. either way, we both probably agree that the only thing better than bacon and eggs for breakfast, is piling them onto toast layered with melty cheese and biting in while everything is messy, runny and very, very satisfying. for me, this is a sunday morning sandwich, and this sunday cannot come too soon.
