what a way to end another crazy hot day in toronto. a tornado?? mmkay, enough with this crazy week already. i’m longing for cool and decidedly uncrazy right now. dinner included, which led me to this tomato and fennel salad. three thinly sliced roma tomatoes and one large fennel bulb was enough to feed four. to dress it, a simple but well-suited vinaigrette made with lots of olive oil, some white wine vinegar, just a splash of balsamic, salt, pepper and some of those sweet fennel fronds. it turned out even better than i imagined. i might add some black olives next time. the next time i make this, not the next time a tornado hits toronto. the next time that happens, i’m adding a healthy glug of vodka to this dressing. (hmm…)
