Every winter we forget that we used to make this, “like, all the time last winter!” It’s a welcome rediscovery. Like a traditional Nicoise salad, it has eggs, potatoes and is dressed with a french vinaigrette. Unlike others, this one is vegetarian and omits tuna, but it’s built to be hearty with winter vegetables replacing lettuce leaves. It might seem like an unusual candidate for a go-to meal, if it wasn’t cooked entirely in one pot of boiling water.
