…perhaps you haven’t been fortunate enough to have leaves picked fresh and brought by a farmer to a saturday market. maybe, like me, for a large part of the year, the only organic salad you get comes out of a box. the two are not the same.

get the real thing as often as you can, and then, don’t do much to it. your most basic dressing–but of your favourite oil and vinegar–will do. then taste salad like you knew it should have tasted all along, good and green.
