People, you know you have a favourite child. Or sibling. Or parent. It’s fine. Of all of my babies in this issue, this sandwich is my favourite. I’m not saying it’s the best or that it will be your favourite. I am telling you to absolutely make it, though, and don’t cut any corners if you can help it. Because Panko-breaded, fried mushrooms, pickled shallots, harissa mayo and smoked cheese between two slices of bread makes me want to shove these pictures on your Facebook wall the way you did with your firstborn. But not your second.
