You know how the late, great Marcella Hazan made famous that recipe for canned tomatoes, butter and a halved onion? That’s a genius recipe if I ever saw one, proving that butter belongs in a tomato sauce and that you needn’t slave over a tomato sauce for it to be flavourful. It’s because of that sauce that I keep this one so simple—no garlic here or even herbs—and while I do use olive oil I make sure to add butter. Its appeal is in its uncomplicated-ness. It’s easy to eat. Those of you with kids probably make something similar. I don’t have kids, yet when I make this sauce it goes on the fun-est pasta shape I have around. Note to self: you’re out of those little wheelbarrow ones.
