I always hated when people assumed my vegetarian meals were boring, when I think it takes more creatitity to plan a meal that doesn't have meat at the centre of it.
I say for this one, splurge on ingredients, make things rich and delicious, but make it stress-free. The menu that follows can be made in advance of anyone arriving.
